Hooray! So glad it came out good. I love love to eat them topped with fried eggs with slightly runny yolks. Mmmmmmm.

Made these last night, topped with a fried egg (I had two), avocado, and pepper jack. SO good. We didn't make salsa because it was strictly a leftover meal, made with stuff left from family dinner that Monday. (Black bean + cactus quesadillas and carne asada)

hey! i was just thinking of you and wanted to say hi, and then i saw this…these look *delicious* (i used to make this enchilada sauce that started out kind of like this, and it was always SO yummy…until one day, the exact same chiles i'd always used, in the same package, from the same mexican grocery, were so fiery hot that i could barely eat a fingertip's worth of the sauce…and then the same thing happened the next time, too! and then i gave up. a true mystery.)wow. that was a bit of digression, but what i really meant to say was hello(!), and also that anjali mentioned you might be back in the OC when you're done on the farm, in which case we should definitely make plans to meet up, because i'd really love to see you. xoxo.
